Hummus Without Tahini

Look at that, another hummus post! I decided this one was worth posting too because some people can't find tahini or won't buy it because of the price. Sometimes I can get it at the grocery store but about 3/4 of the time, there's none to be found. If the health food store has it, it's about $15 for a jar and I just can't bring myself to spend that much on a jar of sesame seed paste. That's when I turn to this recipe, which I also made up! It's pretty similar to the other recipe except it uses canned garbanzos (for the sake of convenience) and it has more olive oil (for flavor and fat that the tahini would add) and more coriander (for flavor- I love coriander). So if you don't have tahini, I suggest you give this recipe a go. It will still be yummy.

Hummus Without Tahini

2 cans garbanzo beans, drained and liquid reserved
6 T olive oil
5 T lemon juice
4 T bean liquid
3 garlic cloves
1 t salt
1 t dried ground coriander seed
1/8 t dried ground cumin
1/8 t cayenne pepper

Combine everything in the bowl of a food processor or heavy duty blender.

Yield: about 4 cups

  1. I can make this! It's easy enough that I can figure it out. Any tips for mushing up garbanzo beans for those of us without cooking technology? I've attempted to do makeshift hummus before but squishing the garbanzos with a fork is virtually impossible.

  2. Unfortunately, you really need a machine of some sort to make hummus easily. A food processor, blender or immersion blender work. Mashing the beans with a fork would take forever, ugh! Do you have a potato masher? That would probably work, though it would take a while and wouldn't be as smooth as usual. I also had hummus once that someone put through a food mill. Hopefully you can find something appropriate because hummus is too delicious to live without :D

  3. I've attempted a potato masher...twas a complete fail. I think I'll try to find a mini-food processor because I consume copious amounts of hummus and would love to make my own instead of buying it. Also, you should friend me on facebook (Rad Dyke) if you so choose. :) Maybe I'll spotlight you in my next blog spotlight. :)

  4. Rad Dyke, sorry to hear the potato masher didn't work! I had my doubts. You'd have to like really chunky hummus for it to work out. My food processor is actually quite little (this one: http://www.amazon.com/Cuisinart-DFP-3-Handy-3-Cup-Processor/dp/B0000A1ZMU/ref=sr_1_9?ie=UTF8&qid=1327188554&sr=8-9), it has a 3 cup capacity. It makes half a batch of this hummus great though! My mom only ever had a little food processor and it works for me too :) If you make a whole recipe you'll just need to do it in 2 batches, then stir it all together. Easy peasy.
